It is rich in some of the essential minerals and vitamins and contains a considerable level of antioxidants and amino acids. In this post, we will talk about matcha tea harvesting process, and things you need to know about buying the tea.
The process
Matcha has its origins in China, although it has been a part of the Japanese culture for centuries. Today, the best quality matcha teas come from Japan, where is grown in the southern parts of the country. The production of matcha is slightly different from that of green tea. Around three weeks before the harvest, the bushes are covered with shades and canopies to prevent direct sunlight. This reduces the entire process of photosynthesis and allows the tea leaves to produce more chlorophyll. It also increases the production of amino acids. L-Theanine, which is an important amino acid, is found in large quantities in matcha tea and tends to calm the mind considerably, without the drowsy effects.
Once the plants are ready for harvest, the best buds are handpicked and taken out for further processing. In some cases, these leaves are briefly steamed for a while and then dried. At these point, the leaves are known as tencha. These are then dried and stored and later ground to a fine powder that you buy from the market. You can visit the Matcha Resource Center to know more.
